A New Meal to Try – Crispy Chicken Thighs with Green Beans

We hope you have been enjoying ASDA Wellness Month. Last week, Kasey Ha shared with us some of her favorite meal prep foods on District 1 Pearls. This week, Kristen Yant (Harvard D’20) has shared with us one of her favorite meal prep ideas to try out. Whether it’s lunch or dinner, you will enjoy a healthy and tasty new meal in a matter of minutes.
Crispy chicken thighs with green beans: A Super easy meal with great nutrition and it can be paired with rice or some other grain if you are looking for a greater carb content.
Preheat oven to 475.
Pour a thin layer of oil onto a cast iron or other oven safe pan and heat to Med/high. Salt and pepper chicken (other spices are welcome too). Once the pan is hot place the chicken thighs skin side down and cook for 2 min. Turn burner down to Med/low heat and continue to cook chicken for 12 min longer letting skin get nice and crispy. Move the chicken and pan around periodically to make sure that the chicken is being cooked evenly.

Meanwhile wash and cut green beans. After drying place on a tin foil lined sheet and drizzle with olive oil, salt and garlic powder (agian other spices welcome).

Once chicken has cooked for 12 min in the pan place the pan in the oven (skin side is still down) and continue to cook. Place green beans in over as well.

Do a little dance while you wait for you crispy 🍗.
After 12 min take chicken out and flip so that your crispy skin is showing and put it back in the oven for 5 min to finish cooking (you can check with a meat thermometer but unless your chicken thighs secretly came from a T. rex you should be good).

Take chicken out of oven and let rest for 5 min. Leave green beans in the oven during this time.
After 5 min of resting take your green beans out of the oven, plate and enjoy your super crispy 🐔 🍗🐣.
